Recipe by Matt of 3Gents

Ingredients:

  • 1 teaspoon of each:
    • Coriander seeds
    • Cumin seeds
    • Goda masala
    • Nigella seeds
    • Fenugreek seeds
  • 1 whole cauliflower head split into florets

 

Salad:

  • 100g cut cranberries
  • 100g walnuts
  • 100g cooked red lentils
  • Bunch of parsley
  • Crème fraiche drizzled on top

Method:

  • Dry roast all seeds & spices
  • Coat cauliflower and roast all in oven 180 degrees C for 45 mins
  • Add all to salad
