Ingredients:

  • Small goat’s cheese – 100g
  • 2 ripe figs – quartered
  • 1 red apple finely sliced
  • 1 bulb fennel finely sliced
  • Mixed leaves -1 bunch
  • New potatoes – as many as required

Dressing:

  • 20ml balsamic vinegar
  • 1 crushed bulb garlic
  • 40ml extra virgin olive oil
